A shorter list, with a reason for every pick

What sounds good this week?

Use the slow cooker for the main protein, then plan the finishing work. Carnitas needs a broiler and rice, barbacoa needs rice and skillet vegetables, and pot roast includes separately mashed potatoes. These are existing recipes, not meal plans or dump-and-go promises.

How we chose: Three selected published recipes with a Slow Cooker cooking method, four servings, at least 50g protein per listed serving, and more than 25% of listed calories from protein. Nutrition includes each recipe’s declared sides and toppings; this is a focused shortlist, not an exhaustive ranking.

Pork with rice and beans

Carnitas adds black beans, lime rice, salsa verde and cheese. Its written slow-cooker range is LOW 6-8 hours or HIGH 4-5 hours, followed by an 8-minute broil. Do not mistake the recipe’s 6-hour-40-minute listing for a guaranteed finish time.

Chipotle beef with skillet vegetables

Barbacoa uses chuck roast, peppers, onion and rice. Allow LOW 7-8 hours for the beef, then separately cook the rice and sauté the vegetables. The listed 7 hours 40 minutes does not cover every appliance or upper-end cooking time.

Pot roast with mashed potatoes

Pot roast offers carrots and mashed potatoes rather than a rice bowl. Its written range is LOW 8-10 hours or HIGH 5-6 hours, plus optional searing and gravy and separate potato preparation; the 9-hour listing is a planning estimate.

Slow Cooker Carnitas Bowls

01 · Crisped pork with rice and beans

Slow Cooker Carnitas Bowls

65.6g protein$3.89 / serving est.400 min

647 calories and 65.6g protein per listed bowl, including rice, black beans, cheese and salsa. A broiled finish gives the pork a different texture from the two beef choices.

Before you cook: Weigh 2 lb pork after trimming visible fat; the shopping model allows about 2⅔ lb before trimming. Remove the orange peel and bay leaf before shredding. Use one 15 oz can of beans, drained and rinsed, not 15 oz of drained beans.

Chipotle Barbacoa Bowls

02 · Chipotle beef with peppers and rice

Chipotle Barbacoa Bowls

55.6g protein$7.00 / serving est.460 min

537 calories and 55.6g protein per listed bowl. Chipotle in adobo, cumin, oregano and lime season the beef; peppers and onion cook separately rather than softening in the slow cooker.

Before you cook: Weigh 2 lb raw chuck after trimming visible fat; the purchase estimate allows about 2⅔ lb. Shred tender beef back into its juices. Cook 1 cup dry jasmine rice and sauté the two peppers and onion separately.

Tender Pot Roast

03 · Beef, carrots and mashed potatoes

Tender Pot Roast

82.6g protein$10.41 / serving est.540 min

826 calories and 82.6g protein per listed serving, with 12g saturated fat and 1,938 mg sodium. This is the richer potato-based choice, not a calorie-equivalent swap for either bowl.

Before you cook: The recipe uses 3 lb trimmed raw roast, about 4 lb before the model’s trimming allowance. Boil and mash the potatoes separately. The declared sour cream and cornstarch are included in estimates even though their finishing steps are optional.

Make the batch work for you

Long cooking still needs a finishing and cooling plan

Thaw first and use the written method

Thaw meat in the refrigerator before putting it in a slow cooker. Follow the appliance’s loading and liquid guidance, keep the lid on, and use the stated cooking range until fork-tender. Whole beef and pork cuts must reach at least 145°F with a 3-minute rest, but shreddable tenderness generally requires longer cooking. A timer alone does not establish doneness.

Plan the separate equipment

Carnitas needs a broiler-safe sheet for crisping and a pot or rice cooker. Barbacoa adds a skillet for peppers and onions. Pot roast needs a pot for potatoes and, if making gravy, a saucepan. One slow cooker cannot make all three batches at once; choose a recipe or schedule separate sessions.

Chill promptly; do not hold a week of leftovers

Divide cooked food into shallow containers and refrigerate within two hours, or one hour above 90°F. Keep the refrigerator at 40°F or below and use cooked leftovers within 3-4 days. Freeze later-week portions promptly after prep or cook midweek. Thaw in the refrigerator and reheat leftovers to 165°F throughout in the microwave, oven or on the stove, not in a slow cooker.

Compare the full recipe, not just the meat

The listed nutrition includes rice and toppings for the bowls and potatoes for the roast. Pot roast has the highest calories and saturated fat of these three; none is a low-sodium selection. Pork and chuck estimates assume visibly trimmed raw meat, so a fattier cut changes the numbers. Price figures are historical ingredient-use estimates, not complete packages or current retailer carts. Optional ingredients with specified amounts remain included; substitutions and extra toppings change the estimate.

Pack safely for later. Refrigerate cooked food in shallow containers within 2 hours, or 1 hour above 90°F. Keep the fridge at 40°F or below and use leftovers within 3-4 days; freeze later portions promptly. Reheat leftovers to 165°F throughout. Follow the recipe’s cooking instructions and check the safe cooking temperatures. USDA leftover guidance.

Nutrition and time

Protein and calories come from the current recipe labels and describe one listed serving. Brands, portions, and substitutions change the values. The totals include the recipe’s sides and sauces. These selections have at least 50g of protein per listed serving.

Times come from each recipe, rather than a separate timed cooking test. Prep speed, appliance preheating, pan size, and cooking in batches can change the time you need. Read the full recipe before you start.

Ingredient-use estimates

Costs allocate the amount of each ingredient used, rather than every full package you buy. Optional ingredients and exclusions follow each recipe’s cost breakdown. Taxes, delivery, and membership fees are excluded; local prices and a first pantry shop can cost more.

These recipes’ cost records were checked September 21, 2026. Formula updates can retain earlier price observations. Open a recipe for its ingredient-level price sources and dates.
