Instructions

Prepare the ham
Heat the oven to 325°F. Remove the fully cooked ham from its packaging, discard the packaging liquid and separate glaze packet, and pat the ham dry. Place it in a snug roasting dish. If using bone-in ham, the recipe requires 2 lb of edible meat, excluding the bone.

Stir the 6 tbsp apple juice and 1 tbsp maple syrup until smooth. With a clean meat injector, inject small amounts into the thickest sections every 1-1½ inches, slowly withdrawing the needle as you press. Stop when liquid readily leaks out; do not force in the entire mixture. Keep the injection separate from the spiced glaze so the needle does not clog.

Warm the ham
Pour the ½ cup roasting apple juice around the ham and cover the dish tightly with foil. Bake for about 30-40 minutes, checking the center with a thermometer after 25 minutes. Follow any longer heating time on the ham package; shape and slicing affect the time.

Boil the potatoes
While the ham warms, place the potato chunks in a pot and cover with cold water. Bring to a boil, then reduce to a steady simmer and cook for 15-20 minutes, until fork-tender. Drain thoroughly and let the potatoes steam dry briefly.

Mix the glaze
In a clean bowl, mix the glaze maple syrup, Cajun seasoning, cayenne, paprika, apple juice, and apple cider vinegar. Divide into two portions for the two glaze applications.

Glaze and finish the ham
Uncover the ham and brush with the first half of the glaze. Bake uncovered for about 10-20 minutes, then brush with the remaining glaze using a clean brush. Continue heating as needed until the center reaches 140°F for fully cooked ham straight from a USDA-inspected package, or 165°F for repackaged ham or leftovers. Use the thermometer, not the clock, to judge doneness. For a darker finish, broil briefly for 1-2 minutes, watching constantly.

Rest the ham and roast the beans
Move the ham to a platter and tent loosely with foil while the beans cook. Discard the roasting liquid; it is not used as a serving sauce. Increase the oven to 425°F. Toss the dried green beans with olive oil, garlic powder, salt, and pepper. Spread on a sheet pan and roast for 15-20 minutes, tossing once, until tender with browned edges.

Mash the potatoes
While the beans roast, mash the hot potatoes with the butter and warmed milk. Season with the potato salt and pepper. Mash just until creamy; avoid a blender or food processor. Keep covered and warm until serving.

Serve

This ham combines an apple-maple injection with a Cajun-spiced maple glaze. Mashed potatoes balance the heat, and a tray of roasted green beans finishes the plate. The potatoes use milk and two tablespoons of butter for the full batch.

Cooking notes

Keep the injection thin and free of ground spices. Add it gradually; a spiral-cut ham may retain less liquid than an intact piece. Apply the glaze in two layers and watch closely if you use the broiler.

Dry the green beans well before adding oil and leave space between them on the sheet pan. Mash the potatoes while hot with warm milk, stopping as soon as they reach the texture you like.
