Preheat oven to 400°F (200°C).
Chop the onion, mince the garlic, & peel and cube the potatoes.
Heat olive oil in a large skillet over medium heat.

Add finely chopped onion and minced garlic, cooking until softened.

Add lean ground beef, cooking until browned.

Add tomato paste, Worcestershire sauce, dried parsley, dried thyme, dried rosemary, salt, and black pepper. Mix well.

Pour in beef broth, bring to a simmer, and cook until the mixture thickens. If needed, you can add a tbsp of flour or two to aid in this, but you likely won't need to.

Stir in frozen carrots, peas, & corn, and cook for another 5 minutes. Remove from heat and set aside.
