Ingredients
  

For the Meatballs:

  • 2 lbs ground beef 93% lean
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup 2% milk
  • 2 large eggs
  • 1/2 medium onion finely diced
  • 1/2 cluster garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp allspice
  • 1/2 tsp nutmeg

For the Gravy:

  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 3 cups beef broth low-sodium
  • 1/2 cup heavy cream
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper

For the Mashed Potatoes:

  • 1.5 lbs Yukon Gold potatoes peeled and cubed
  • 1/2 cup 2% milk
  • 1/4 cup unsalted butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

Prepare the Meatballs:

  • Preheat your oven to 400°F. Line a large baking sheet with parchment paper.
  • In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, milk, eggs, onion, garlic, salt, pepper, allspice, and nutmeg. Mix gently until just combined. Avoid overmixing to keep the meatballs tender.

  • Roll the mixture into 1.5-inch balls (approx. 32 meatballs) and arrange them on the baking sheet.
  • Bake for 18–20 minutes, or until the meatballs are browned and cooked through.

Prepare the Mashed Potatoes:

  • While the meatballs bake, place the cubed potatoes in a large saucepan and cover them with water. Bring to a boil and cook for 12–15 minutes, or until fork-tender.

  • Drain the potatoes and return them to the pot. Add milk, butter, salt, and pepper. Mash until creamy and smooth. Cover and set aside.

Make the Gravy:

  • In a large skillet, melt butter over medium heat. Whisk in the flour and cook for 1–2 minutes until golden brown.

  • Gradually whisk in the beef broth, ensuring no lumps form. Add heavy cream, Dijon mustard, Worcestershire sauce, salt, and pepper. Simmer for 5–7 minutes, or until thickened.

  • Add the baked meatballs to the gravy, tossing gently to coat.

Assemble:

  • Divide mashed potatoes evenly among meal prep containers or plates.
  • Top with Swedish meatballs and generous ladles of gravy. Enjoy!
