  • 1 cup chicken broth
  • 1/2 cup skim milk

Instructions

Cook the Pasta:

  • Bring a large pot of water to a boil and cook rotini according to package instructions. Before draining, reserve about 1 cup of pasta water, then drain and set aside.
    8 oz rotini

Prep the Shrimp:

  • In a large mixing bowl, toss shrimp with garlic powder, onion powder, Italian seasoning, red pepper flakes (if using), salt, and black pepper until evenly coated. Set aside.
2 lbs raw shrimp, 1 tbsp garlic powder, 1 tbsp onion powder, 1 tbsp Italian seasoning, 1/2 tbsp red pepper flakes, 1/2 tsp salt, 1 tsp black pepper

Cook the Shrimp:

  • Heat a large skillet over medium-high heat and coat with olive oil spray. Add shrimp in a single layer (cook in batches if needed) and sear for 2–3 minutes per side until opaque and lightly golden.
    olive oil spray
  • Remove shrimp from the skillet and set aside.

Cook the Mushrooms:

  • In the same skillet, add sliced mushrooms and cook over medium-high heat, stirring occasionally, for 5–7 minutes until they release their moisture and become browned and tender. Season with salt and black pepper, then remove from heat.
16 oz white mushrooms, olive oil spray, 1/4 tsp salt, 1/2 tsp black pepper

Make the Creamy Basil Garlic Sauce:

  • In a blender or food processor, combine fresh basil, Parmesan cheese, garlic, chicken broth, skim milk, and black pepper. Blend until smooth and fully combined.
2 cups fresh basil, 1/2 cup grated Parmesan cheese, 3 cloves garlic, 1 cup chicken broth, 1/2 cup skim milk, 1/2 tsp black pepper

Build the Sauce:

  • Pour the basil sauce into the same skillet and bring to a gentle simmer over medium heat. Cook for 2–3 minutes, stirring occasionally, until slightly thickened.

Assemble:

  • Return cooked shrimp and mushrooms to the skillet and stir to coat in the sauce.
  • Add the cooked pasta and toss until everything is evenly combined. If needed, add a splash of reserved pasta water to loosen the sauce and help it cling to the pasta.
